Personally, I've only ever used two.
- Beware IRCd, not that that hard in comparison to others, not that many features either though sadly.
- Unreal IRCd, pretty much as advanced as it gets, the only one I've really used heavily, worth the effort to set it up.

You could also try CENSORED, ratbox, ignition (Which is probably the easiest from what I've heard, but never used it.), or any number of other ones I won't mention.

Generally, the configuration files can be challanging if you don't know what you're doing. If you know your lines though it's a walk in the park.

I use BewareIRCd myself, it's really a great IRC-server and only takes minutes to setup.
